September Superfood: Tomatoes

Hey guys! My name is Kaleigh, and I’m a Wellness Intern with Chartwells this year. I am going into my senior year, and I don’t know about y’all, but I may need some extra help staying focused and on my A game as classes continue on this fall! What you eat can really help in this area, and plus some. Lucky for us, the September Superfood, tomatoes, has all the tricks up its sleeve when it comes to health benefits.

Tomatoes contain:

  • Choline – a nutrient that helps with sleep, muscle movement, learning, and memory
  • Fiber, potassium, and Vitamin C which helps support a healthy heart and low blood pressure (1 cup of cherry tomatoes contains 2 grams of Fiber)
  • Lycopene, lutein, and beta – carotene which are antioxidants that may have an effect on protecting your eye sight
  • Vitamin A and Folic Acid

Tomatoes come in all shapes, sizes and colors; Cherry tomatoes, Roma Tomatoes, Globe Tomatoes, Heirloom Tomatoes, Pear Tomatoes, and countless many more. There are tons of opportunities to incorporate them into your diet, and add some flavor and health benefits. Plus with the possibility for your learning and sleep to improve, it makes this vegetable all the more useful as classes start!

Whether you are living in a dorm room, apartment, or Greek house this year, here are some tomato recipes that are easy, quick, and most importantly yummy! Gather some friends, old and new, and try these out as you watch the Hogs beat TCU this weekend. WOO PIG SOOIE!
